This is a very quick, easy, basic cake recipe that my husband taught me. It can be used for any kind of cake or cupcake, just customize as you like!
Preheat your oven to 200 degC. In a large mixing bowl add the following ingredients:
200ml whipping cream (keep the plastic beaker and use to measure the flour and sugar)
4 medium eggs
Grated zest of 1 lemon
2 heaped plastic beakers of flour
1 level beaker of sugar
1 tablespoon (or 1 x 15g packet) baking powder
Mix all the ingredients together and pour into the baking form of your choice. This could be on a flat baking sheet, muffin forms, or as in this case, a 23 cm diameter, round silicon baking form. Baking time varies depending on the form. This cake took around 30-40 minutes. Cake is done when a knife inserted into the centre comes out clean.
Leave to cool thoroughly before icing. In a mixing bowl combine the following, using an electri whisk:
200g plain cream cheese
250g icing sugar (you may need more or less)
2 tablespoons lemon juice
When the icing is thoroughly combined and slightly runny, pour over the cake and smooth using a spatula. Decorate with anything you like, but here I used baking confetti in Spring-like colours.
