Sue Megginson was a very dear friend of my Mother’s who bravely fought, and unfortunately lost, the fight against cancer. Such a lovely lady, she will be deeply missed, but fondly remembered. This quick and simple, yet scrummy pasta dish has now become a firm family favourite and will always remind us of her.
Ingredients: (amount dependent on how many you are cooking for)
- Smoked salmon
- Pasta (any kind will do)
- Creme fraiche
- Lemon juice
1. Cook the pasta according to instructions or until al dente.
2. Cut the smoked salmon into ribbons. Chop the dill finely and add to the salmon and the creme fraiche in a separate bowl. Add lemon juice to taste, but not too much (the sauce should not be too thin). Mix well and then add to the pasta.
Serve with a green salad (or any salad you like).
