For those days when you need a quick and easy salad, which goes with anything and tastes really great, look no further!
- 1 jar of sliced beetroot
- Spring onions (scallions in the U.S.)
- Olive oil
- White wine vinegar
- Dijon mustard
1. In the bowl in which you will serve the salad, make up a simple vinaigrette using the olive oil, vinegar and Dijon mustard. You don’t need too much, just enough to cover the beetroot nicely. Use ready-made vinaigrette is you want, no-one will know!
2. Put the sliced beetroot into the bowl. Add several finely sliced spring onions (about 3 or 4, using the green as well as the white).
3. Mix all ingredients together and serve (careful not to get beetroot juice on your clothes, but if you do here is a handy tip how to remove it).
